The tender Chardonnay 2018 Convicciones is signed by Andrea Mufatto and was created in her obsession to craft a white with the essence of the variety with the profile she likes. It has a less expressive nose but with structure to fill the palate, wide and long and with a dry finish. It comes from their La Cautiva vineyard in Gualtallary, where the plants are 10 years old and the soils are stony with a high percentage of limestone. The grapes underwent a three-day maceration with the skins and then were pressed. The juice fermented in 1,000-liter oak cask, where the wine matured until they put the following vintage to ferment and the wine was moved to 500-liter oak vats to complete almost three winters. 2018 feels quite complete, combining power with finesse. It has very good freshness and balance. 1,500 bottles produced. It was bottled in June 2020.
